I have been tasked to build an HD video replay system.
My plan right now is to use a Sony HD camcord - HDMI -> Hauppauge Colossus -> PVR Software.

Will Next PVR software allow me to bring in that HDMI/Component signal from the Colossus, record it and allow me to pause and rewind that live feed?

For that limited purpose, I would think Capture4Me (http://www.capture4me.com/) would be a better application. You could do it with NextPVR, but I think you'd run into limitations and peculiar consequences of using a generalized PVR app for such a special purpose. Also, your phrasing "I have been tasked..." possibly implies a usage not allowed by NextPVR's strict non-commercial usage license.

Hauppauge Capture http://www.hauppauge.com/capture/ is also an option.
