This may already be a feature of one of the plug ins(or gbpvr itself for that matter), but I have done a bit of searching and didn't see anything.

One thing I've heard Tivo and similar services do is allow you to do is mark things to record by a keyword, perhaps you want everything related to "Harrison Ford", or "mountain biking". Is this feature available already?

There is no built-in functionaility that does this, but I think there is a plugin that does. (not sure which one, xrecord?)

Yes, CDK Scheduler (priorityrecording.exe + friends) that comes with the XRecord installer does this.

Actually, for people with more limited disk size, a twist on this would be a feature to look for keywords in the guide (after each update I guess), and show some message or similar (on the main menu page?) when a new program that fits a keyword is found. Then the user can choose whether s/he actually wants to record it or not.

You can pretty much do this already. Once CDK scheduler has run (either in the postupdateepg.bat, in a scheduled task, manually from xrecord) the shows matching your keywords will appear in the pending section. You could then select the ones you don't want and select "Seen it" and those won't get recorded. This workflow does require you check what's pending however.

Just look at the "Scheduler" option in the xrecord menu. In the "more" and "power modes" you can set the detection mode to "RecordByTitle", "RecordByTitlePartial", "RecordBySubTitlePartial", "RecordByDescriptionPartial".

I believe you can do this type of thing with I-xmltv as well. Requires batch file editing though.
