If it were me,
I would mount a PC under the kitchen floor in the basement & feed the video & audio to a desktop LCD monitor with built in speakers & of course also a USB extension cable for the remote control dongle.

They way I see it, there isn't much of a difference between doing that & running coax to a TV.

Just to give you something else to think about, and maybe to give you more options, why not think about using a couple of Homeplugs to get your
network to an MVP, as you were saying cabling an ethernet cable might
be an issue.

I've been using a pair of these 85PE ones for ages now, and they are brilliant.

Plug one into your router, where the main GBPVR server is running, and just plug the other into the kitchen, and either plug an MVP or just plug the laptop.

Simple.

If you decide to go with wired.....

Not sure if you have a dishwasher or not, but I just installed a new one and found that there is tons of room behind the face of the washer. Plus this usually grants straight access to the subfloor. Widget may have the best idea in terms of running the cabling up from the basement. the dishwasher provides the access you need without messing up your cabinetry, walls, or flooring. If you run it right the only things you would need is the tv, wall mount stand and the usb remote dongle which would easily be mounted to the wall mount stand. Hopefully this gives you some more ideas.
