when I add an IPTV channel list, I see there is a "max connections" setting. 

Is this setting for how many simultaneous streams NextPVR will run from that source? I thought maybe I could save some resources if I set it lower but not too sure what it does.

That is the maximum number of simultaneous connections to an IPTV source. If you set it to 2, you'd be able to do a max of two recordings at a time.

Generally IPTV connections are very low users of resources though, so I'm not sure how much it'll help you. I guess since you're on a RPi3 though, which is about as weak as a server might get, and maybe the limit might help you from generating too much I/O with too much going on at teh same time.
