Jellyfin started with the open source MediaBrowser (now Emby) code which had really basic sorting. Emby did upgrade the PVR addon interface to NextPVR and improved on the series and season episode sorting quite a bit but then Emby killed off the interface entirely, forcing users to their infrastructure.
In Jellyfin there is still a lot of work to be done internally for PVR which is why I directed you to their forums. This seems to be a very low priority for their team. Your best bet is probably just to scan the recordings folder as video.
There is a Roku channel for NextPVR but if you use it I would strongly recommend (as a minimum) remuxing ts to mp4 in parallel processing as explained on this forum. I would be interested in hearing how their Roku client works with PVR now, it was impossible when I last looked which actually spearheaded my desire to write a Roku channel.
