From my own experience I find Wikipedia to be pretty well researched and if not entirely fair on a subject it gives you further sources to explore.

I think you just soak the rinds in salt water, then bake em for 3 hours or so at 300F and fry em. Season them to taste after frying with salt and pepper. In an effort to save your heart I don't want to give any more details than that!
