I'd like to have the option to pause on the fly, which I guess means starting in time shift all of the time. For example, if I'm watching a baseball game I want to be able to pause and rewind, and maybe have the last 30 minutes or something available.

How do I go about doing this to be a default?

In the config app there is an option to start in timeshift mode. I can't remember exactly which tab it's on and i'm not at my pvr at the moment, but look through the config app and you should see it.

IIRC it's called "use live preview", and should be unticked for timeshifted.

Wow, that was simple, thanks.

Edited: Problem disappeared after a minute, works great.

But there is a little pause when I change channels, also, is this normal? It takes a second or two to change the channel, and then it'll pause the picture for another second or two. Is this normal?

Yes, it has to stop the live preview on the previous channel and setup for the next channel. The caveat I suppose.

Time shifting means recording all the time as opposed to live preview where the output is send from the tuner directly (more or less) to the video-card.
So when timeshifting, the system has to record a few secs before it can start showing the recording.

Can I ask a question about timeshifting:

Does GBPVR in streaming client mode always timeshift? I'd like it to start streaming instantly from the server instead of displaying the black timeshift screen every time video starts, but I don't know how to make that happen :O

Yes, it has use timeshift mode if you want to view tv from a client PC. There is no way around this.
