For some reason whenever I select English US it just defaults back to English. Is there a way to fix this?

Rename the file to English_US and try it. I had issues with the space in the file name.

I don't see a file named English_US? I tried renaming the XML files, but that didn't work?

I believe you also have to edit the name in the language.xml (or whatever it is called, I am at work and cannot remember) file as well.
