I am correct in understanding this records only shows that are missing and haven't been recorded yet even if the show was originally broadcast months or years ago? Or is it for shows marked as new in the EPG that have never been broadcasted before?

Only those marked new. However there is also a unique identifier in the North American data that also acts as a flag to only record files that you already have not recorded and then saved or deleted.

In the states it'll already do this by default if you've got 'dont record duplicates' enabled. This stops it scheduling any episodes you already have in either your ready list or pending list (or have deleted in the last three months).

You can tune that, I probably will make mine 9999 days.

Yep, as Martin said, you can tweak that. 90 days is the default, but you can set it to whatever number of days you want.

If you delete a series recurring recording and re-add it, does it see past recordings or does it start from scratch?

No, it doesnt delete the history.
