Emulators and Recording TV at the same time????

Obviously I need plenty of processing power to play emulators (ps,n64), but, whats the performance of playing an emulated Playstation game while recording two programs at the same time?

Has anyone had experience doing this, and, if so, what would be the recommended proc/ram to get?
