I can see your problem in these new logs.

2007-10-16 15:50:00.093 ERROR [5] Error starting recording: System.IO.DirectoryNotFoundException: Could not find a part of the path 'U:\Manual Recordings'.

Is the U:\ drive a local disk or some mapped network drive? If its a mapped drive then you need to remember that the recording service runs under a different user account so does see these drive mappings.
