It came up with about 500 "unknown" channels. I cant imagine thats right as I shouldnt have 500+ channels unless cable company made a mistake by cancelling the service on the bill but leaving the premium cable live.

This is all the cable channels on your network. They're not required to transmit channel names on digital cable systems in North America, so they usually dont, which is why the channels have names like "Unknown xxx.xxx". There is nothing in the stream to tell NextPVR what those streams are.

When you did that scan, you'd have noticed that the majority of those channels are marked as encrypted. You wont be able to watch any of those channels, so there is no point in adding those. Usually only a small handful of local channels are available unencrypted - those are the only ones worth adding. Unencrypted QAM is going away on many cable networks (ie, all channels will be encrypted). With any luck your cable company still has some channels unencrypted.

Im trying to see if it will pull the EPG but its taking forever...

There is no point in leaving any QAM channels set to 'DVB/ATSC EPG'. There is no real broadcast EPG on digital cable in America. You'd need to switch those over to Schedules Direct or 'none'. After that your EPG update should be much quicker.

Ok...I think im getting somewhere.
Out of those 500+ unknown channels, there are the channels I SHOULD be getting mixed in. Those actually work with video and sound! Phew!
Is there an easy way to delete in bulk around those channels?

Usually at the end of a QAM scan, you'll see all the cable channels listed, most of them are marked as '(encrypted)'. Those encrypted channels wont work for you, so no point in adding them. The other channels can be added.

Of those other channels that aren't encrypted, most will likely have a name like 'Unknown xxx.xx', since they're not required to broadcast names on cable systems in north america. The only channels that'll typically have names are rebroadcast local ATSC channels (since names are required on ATSC, and still there when rebroadcast on QAM).

It took me a while to scan, keep the channels I wanted, map them, then rename the channel numbers because they were all over the place. But i think i'm set!!!
