Live pause/rewind (timeshift) - cannot find setting

BUT
There is no basic option! and no option to switch to basic.
The Add-on/PVRclients screen I get does not match that which you put up at 01:18 (UDT I asuume) this morning.

On entering my Add-on/PVRclients screen I was dropped immediately in to the "edit IP address option"
Only by left clicking all the way through the IP address, into connection and then down into Advanced did a further click on advanced bring up timeshift.

Incidentally, another issue I am now finding is Kodi+NextPVR now being very slow to skip forward when playing recorded TVshows.
This is new. It did not happen when I was running NextPVR on Ubuntu 22.04 (perhaps I should post this as a separate topic)

Found the setting. My point was that I only have the advanced option. The is no Basic Option for me!
What is the difference between extending TS and 'normal TS' and what are Kodi style recordings?

AS FOR SPEED:
The speed if definitely much slower. It's taking about 40 seconds to load and play a recording and a similar length of time to step forward thru a recording once it is playing.
This is particularly the case on the first 'skip forward'

Something is messed up in your Kodi installation, hitting enter on that word should toggle it through all the options, Standard is default and the screen you showed looked like Basic not Expert.

Speed is also messed up perhaps uninstall the addon and readd it. Make sure you aren't aren't using advancedsettings.xml to change the network parameters. I suspect the issue is with your share though, how fast is LiveTV?

There is a Kodi sub forum for Kodi questions but and I don't even know what you mean with those ts settings. If Kodi look and feel is enabled then skins show the way the skinner designed them. Disabled is a hack to replace the title with S/E and episode information, I put more information this on the Kodi forum including a video. It is gone in Nexus (LE11) since Kodi now has the S/E display sorts etc.
