I've just acquired a 300gb hard drive to use for GB-PVR recordings and would like to move all my current recordings on to it, leaving the OS and GB-PVR install as is.

What do I have to do in order for GB-PVR for keep track of the recordings after I move them from C:\recordings to E:\recordings?

Probably the easiest thing to do is click the 'export recordings' button in the config app to make sure you have an up to date recordings-dump.xml. Then move the recordings. Next, start GB-PVR and go to the recordings screen. All the ready recordings should have been automatically removed. Edit the recordings-dump.xml, and update the path to reflect the new path (search and replace), then use the 'import recordings' button to import the updated recordings-dump.xml.

Backup your database before doing anything though... just in case.
