Hi there.

A question; is it possible to exclude certain categories from the "Show All" view, but still beeing able to browse to that certain category and just view those entries?

No, if Show All is available, all entries will show.

Note, though, an entry can have more than one category assigned, so you could create your own 'Show Custom All' category and place whatever you like in it.
