If satellite or cable STB's were ever to only have hdmi outputs are those type of connections unavailable to hd capture cards or devices like popcorn hour or hdhomerun?

It would depend on what the sat or cable co wanted to do with the hdmi out. HDMI by it self is an unecrypted signal (its actualy the same as dvi but with audio), but it can be paired with hdcp and then its encrypted.

I guarantee you that your cable box's HDMI port is chock full of HDCP.

The really annoying part about all this content protection crap is that occasionally, my motorola cable box decides that my TV isn't HDCP compliant & I have to unplug it from the wall & back in again to clear the green screen.

Or imagine if the networks are given control of the hdmi output is encrypted or not. Although if that were to happen may as well consider it encrypted because all the good stuff would be.
