When I want to play a recorded show, if I have the show highlighted in the Recordings menu and press the Play button on my remote, it plays the show. However, if I watch half the show, go back to the Recordings menu and hit the Play button again, it starts the show from the beginning (as if I had hit enter to get the details and then hit the Play button). Can I get it to resume instead of starting over from the beginning?

I don't press the play button, instead I press the "OK" button. That brings up a menu that lets you select Play, Resume (if tagged), Delete or Close.

Yes, that's what I do now, but I'd like to skip that extra step. If I've already watched part of it, then that's where I want to start again when I hit the Play button on my remote.

You could set it pop the resume prompt to you everytime you play a show which has been watched.
Hit play from the menu, and it will then show a popup asking if you want to resume or restart (resume is the default highlighted option)

Just set
<PromptForResume>true</PromptForResume>
<UseMenuResumeButton>false</UseMenuResumeButton>

in the config.xml file.

Going with the resume theme here in this post, I also think it would be nice to have the option to enable/disable resume for recordings and DVDs seperate. I'd like to have the option to resume on recordings, but I don't want my DVDs to resume...

Unless there already is some hidden config.xml setting for this, I think it would be nice.

I can't get the resume prompt to work upon hitting the play button. The prompt appears only if I highlight the recording I want to watch, then hit enter (OK on the remote) to get the menu, then select Play from that menu (again hitting the OK button on the remote - not the Play button). However, that's not any easier than simply selecting Resume from the menu. I'd like to be able to select the recording I want to watch, then hit the Play button on my remote and resume from where I left off.
