Someone with DVB-S LNB experience would need to answer that it makes sense to me.
I don't recall reading about NextPVR users with the VBOX but I have read about it and some models do create an m3u file that you could use like IPTV. More often NextPVR users use SAT>IP or HDHR as their network gateways. You could even use dedicated DVB-S cards which might be a little bit cheaper if you want to tinker. I think Jellyfin even supports the HDHR and the m3u file from the VBOX directly so you migth not t need NextPVR. NextPVR would give you the OTA guide though which is pretty good from DVB-S. Also NextPVR does support multiprec on some tuner but not sure about the HDHR which lets you record channels from the same frequency
The downside to giving up the Sky boxes is you only get FTA so maybe compare them here https://en.kingofsat.net/pos-28.2E.php for the channels you subscribe too (and actually watch)
