If I have two shows, one on channel 2 from 8PM to 9PM and one on channel 11 from 9PM to 11PM, I've had trouble with the first show getting cut short, even though I have 2 tuners.

I've seen something for this here in the forums, but I don't know where.
Currently Running: 1.4.7

This is the default behaviour, to minimise the possibilities of conflicts when more shows are scheduled

There is a config.xml setting, something about 'alternating capture sources' that can be set to 'true' to force it to put back to back recordings on different tuners.

If i set this to true, will it bump of an ongoing recording to force an alternate tuner or will just use the same tuner since the other tuner is busy?

It wont change anything for recordings already listed in your pending list. It will use slightly different rules when selecting the tuner when scheduling new recordings, and instead perfer alternating capture sources when back to back recordings are involved.
