I know I changed some recurring recordings to a different recording directory during testing of that feature, I don't think anything has changed in that regard. You just go to the recurring recording, select "Update" and change it. The change won't actually take effect on the recordings scheduled off that rule until an EPG update occurs.

I don't see that setting under Update. I'll check again. I'd also like to change the default quality to be best for all current and future Recurring Recordings. Is this possible easily?
Edit: I just checked and I definitely don't see anything about Recording Directory when I go to update. I'll grab a screenshot and attach in a couple of minutes.

Maybe I don't really need these to use Advanced Rules. What I want to accomplish is to record every episode of a series as long as it hasn't been recorded before. Is there an easier way to accomplish this where I can control the recording directory and quality? I also don't want to limit to a specific channel.

All channels and all times is an "advanced rule". Quality is not really an option anymore with the HDPVR or digital broadcasts.

There is an almost undocumented feature added by a patch to 2.5.5 (and present in 2.5.9) to automatically record to the recording path that has the most disk space available at the time the recording starts. This may do what you want.
Add the following to the <Recording> section of config.xml: <DefaultDirectoryChoice>spread</DefaultDirectoryChoice>
