I'm not exactly sure if this is even possible or not... I get it at my house on my TV, but of course not on my PVR. It is simply streamed to the TV, so perhaps there is a way to code it in.

By far the easiest way to do on demand, is to use WINTV2000 to record the show manually, then play it back on GBPVR.
I have made a "fakexmltv" file that I import into a fake campure setting. Then I tune to the fake channel, and I can record and watch from On-Demand straight into GBPVR. It is hard to describe, but it works. I'm even using a remote extender for the cable box remote to the cable box inthe basement. Everything is done remotely on a MVP. It is a nuisance to cycle the ONDemand menus with a 5 second lag.

I have a "media server" in my basement (150 ft away from my TV/MVP) and would love to be able to pull in digital content. Would the easiest way be to get another box and send the output of that to an additional tuner?

Heh, could you just post the fakexmltv, and explain how to tune to/record from it ? Also, does the menu actually appear in WinTV2000, or is it done remotely? Lastly, could you directly hook the cable into the PVR w/o the cable box and get on demand (MUCH easier it sounds like)? TIA.
