Yes, on the Settings->Channels page, Advanced Tools -> Channel Groups. Hit "+" to add a group called "favourites", hi ok, then select the newly created group. Tick the channels you'd like to be part of that group.

This new group should now be visible on the Settings->General screen, and in clients like Kodi.

It's kept in a sqlite database file (npvr.db3)

No

Unless things have changed, I believe that the channels are always listed in the NextPVR channel number order. Normally, NextPVR tries to use the source channel number as its channel number to be user friendly and have them match. However, for most (all?) capture sources, the NextPVR channel number isn't actually used for the tuning, so you can freely change it to something else. Therefore, you can sort of reorder the channel lineup by changing the NextPVR channel numbers for the channels.

unless I'm missing something, would love a dropdown or a quick way to switch to different Channel Groups other than going to settings and changing it there.

You missed providing the information on what client you are using assuming you mean switching groups in a client. AFAIK all clients with group support provide a method of changing the the group. Changing groups in the web app is done in the EPG not the Channel list.

If you're using the web app, you can click lower-left of the tv guide to change the group.
