I hope this is the rigth place for my question: where do I specify the number of recordings to keep?

Whenever you start a recording (not quick record), on the bottom of the screen, there is an option; keep all/1/2..50.
I'm not always right

I get following options on the recordings screen:

Channel:
Start date:
Start time:
End time:
Quality:
Record type:
Name prefix:

I see no option like you describe.
Or am I looking to the wrong screen?

I've never done a manual recording, which I believe is what you are describing, so I can't speak for that scenario, but if you do a recording from the EPG you'd get the "keep number of episodes" option.

I supose that you mean the primary option "TV GUIDE". After selecting a program, I get following options:

at the top, the channel name, the program name and the start time
Record type:
Quality:
Pre-padding:
Post-padding:
and at the bottom, the options "Record" and "Cancel"

But I don't see the "keep number of episodes" option.
What am I doing wrong?

Try setting the record type to something but "once".
