can someone tell me if gb-pvr will work with satellite tv?

No, not currently but I do intend to provide DVB support in an upcoming release. I've been experimenting, but its still at an early stage.

If you use an external usb to ir controller, and additional reciever, it can work, right? Like the USB-IRT and Girder (Do you even need Girder?)

Yes, GB-PVR can record TV from satellite TV using you set top box plugged into a capture card. Firdt or an external USB-UIRT IR Blaster can be used to change channels automatically for you.
