I really think by default windows 2000 just plain uses less resources.
I nlited (butchered) my copy of 2000 to the point where it booted up using about 25 mb of ram & about 40 mb of virtual ram.
this was just the OS, virus & mailware scanners added more overhead of course.
But, I also lost the add/remove option in the control panel & nothing that relied on the MS HTML engine would install on the machine.
It was just an experiment on my part.
I installed it on an older 700mhz PC with 383mb ram & gave it to my wife for surfing the net & word processing.
however, open office, firefox, avg, & zonealarm free worked fine on it & have for a while.
Plus the PC is still fast enough where she doesn't complain.
