I started with a 750 gB disk, which has now filled up. I just added a 1TB disk, but have belatedly realized that GB-PVR does not currently offer a way to have an active "recordings" directory on more than one drive.

How have others handled this?

there are a couple of ways that I can think of :

Use windows dynamic disks to add the 1TB to your existing 750GB (not sure if you can do this on the boot partition). You might want to do some research on this first. Some versions of windows may not have this feature.

change your recordings folder in config.exe to point to the new drive. The database will still have the references to all the existing recordings on the old drive.

The second option is good enough! Will the program realize that a recording exists on the old drive so as not to create a duplicate?

if you are refering to the option to "avoid duplicates" this works via unique showIDs in the EPG guide, not by checking if the recording exist on disk and so this change will not affect this feature.
