I want to make a simple what's new view for the plex plugin (date descending, for x days)
then later on I might try a ready recordings type view.
What do you mean? Do you mean any documentation on them - no. I used them in the xbmc plugin, which is why people have known about them, and this plugin provides a pretty good example of how to use the calls. ie, initiating a session, querying the ready/pending recording lists etc.

You cant currently. You can ask for "filter=all", "filter=pending" or "filter=ready" but that's about it. You can't ask for it to be ordered a certain way, or for only x days. I'd always considered this a UI thing, rather than a data thing.

What do I have to add for sort order?
As mentioned, you can't currently. I could try to add a sort= parameter for the next release if you really needed it. I suspect it'd be easier for you to just do this in your own UI (since you won't have to wait for the next release).
