I have a show that comes on in 2 different timeslots that I want to record, so I want to set up a recording for both these timeslots, but I only want to keep 5 recordings. How will gbpvr handle this, since it has 2 reoccurring recordings on a show all going into one folder.....will it keep 5 for each recording, making my total show count 10?......or will it simply see that it has 5 total and start dumping regardless of which timeslot recording is currently running? Is that confusing?

Yes. There is no built in functionality which will cater for this scenario,

so....if i only wanted 5, could i just set one to keep 3, and the other to keep 2? In other words....each recording "setup" keeps track of it's "own" recorded shows, regardless if other episodes of that same exact show allready exist, they will NOT affect the total "count"?

The max recording count is per season recording. If you have to separate season recordings, their respective max recording counts are independent.

Assuming both these timeslots occur once a week, then you should be able to do that.
