My Scientific Atlanta lets me hook up an external SATA drive, and the way it works is it starts recording to the drive with the most free space (internal or external). Once the drives are at the same level, it starts ping ponging between the drives (this recording internal, next recording external) - it never spreads a recording over 2 drives. I think this would be fairly easy to implement. You could add another recordings drive and go from there!

nice idea, although personally, I would prefer to have it fill a path until it reaches a threshold (in MB or %) and only then switch to the next inline.
So I could have my main drive, maybe faster drive too, and another one (or more) as a spare drive(s).
* Rogers Analog Cable [Canada]
* Hauppauge WintTV PVR USB2
* IBM Thinkpad T42 / 1GB Mem / Centrino 1.6Ghz / 60GB HD / ATI Mobility Radeon 7500 + VGA/DVI out
* MCE Remote + Keyboard
* Win XP SP2 / GBPVR [Latest version. always]
* Pioneer HDTV via VGA (1360x768)
* MS Remote Keyboard
* Logitech Harmony 880 [via MS Remote Control Reciever]

The video archive plug-in includes a utility that will move files older than a specified number of days from the active recordings drive to a list of additional drives, where the target drive is selected either by their order in the list or by the one with the largest amount of free space first. This is not exactly what you've asked for, but does provide an approximation.
