I don't see any reason you couldn't, the only problems that might arise is making sure you have fast enough transfer speed to keep up. My first setup with freenas was using a cheap simple silicon image ide card with software raid 5. I got reasonable transfer speed in and out, about 5-8 meg both ways, but I would recommend a hardware raid card for any sort of high speed need. I have recently changed to a hardware raid 5 card but haven't tested it yet. On a side note I ran a software raid 1 on a 733 mhz p3 and was able to get full wire speed on a 100 meg ethernet.
