Dropping images into \media\MenuArt\Default\ (I also had to create these 2 folders) worked immediately for me.

BTW - you can get some GREAT backgrounds (movies, music, TV, games) from the Aeon skin developer's site here:
http://www.aeonproject.com/downloads/aeon_mediafire.txt

That's a txt file with addresses for a bunch of mediafire.com download links.
