No preferred spot, thje wiki which Graham did a good job on is pretty good. Forums searching is also ok but it helps for others with specific topics rather than "A couple of questions" or blog posts "Newby setup questions - where to look?"
No the web server is not granular at all, but post processing scripts give you the option to transcode by channel oid which tell the type.
VOD only works from the web server but they show up as recordings after they are downloaded.
I wrote the Jellyfin client but I don't use it, NextPVR platform clients are good enough for me. Try it you may like it.
