The recordings dont appear in recurring, even straight away. Logs attached

I missed those logs but sure you probably should restart your server, unless you expect to have one Live TV channel playing since the 6th.

The Kodi log is not a debug log, so not much help and from what I can see the rules are working but the shows you are asking for seem to already be scheduled.  I am still not clear on what the problem is.

Looks like a non kodi issue, just Kodi sets that type

Other than to say there should be a recording showing up. There might be issue with the database and not the timeslot API. If you can post that we can look.

I've updated the docker image to the latest stable and it doesn't seem to be doing the same thing

I will keep an eye on it

Like I said - It actually seemed to be both Kodi and directly through the website on closer inspection
