I ran mine with all unnecessary programs and services disabled to try to track the problem down. I know a thing or two about computers so I know how to do these things properly. I can rule out AV in my case. I got it down as close to a barebones install as I could. Then I gave up.

Can you show a perfmon graph of the process that is using all this extra memory?

You're about six months too late. When I couldn't fix it, I took the plunge and switched to Vista. If I saved anything from my testing, I most likely deleted it since then.

If I had spare x64 hardware I might have set up a tester machine but all my spares are x86. You see, the problem is even though I gave up back then, it still bugs me what was causing the problem in the first place. Why all of a sudden and what could fix it? For now, I suppose I'll have to say I'll never know but maybe, one day...

Its hard to guess. You'd really need more info to perform an accurate diagnosis.

I had severe time constraints during this time period as well. If things had not conspired against me (business/moving house/breakup with girlfriend/other stuff) I might have put more effort into it. At the time I decided the stress was too much to justify a new debugging hobby.

I still find it annoying that the issue existed in the first place. It stemmed from an UPS problem that blew out my original computer. I replaced it with nice shiny new x64 kit and went XP x64. Shortly after (this is the really annoying part) I got everything set up just right,I suddenly got this memory problem happen one day out of the blue. Not wanting to format/reinstall and repeat the whole process (I hadn't imaged the drive yet) I decided to try to fix it. Searching around was either no-one else had experienced this problem or I wasn't using the correct search terms. I tried everything I could given the time available to me but it appears nothing was pinpointing the cause. Eventually enough was enough when combined with what I was going through at the time.

However, I can state that compared with XP x64, XP x86 before it and Vista x64 after it have given rise to absolutely no problems with memory management whatsoever.

Incidentally, I wonder if the OP has any Logitech hardware/drivers installed. I may be way off here and looking for similarities but it's a thought.
