I apologize if this information is somewhere. My searches were unsuccessful. Here's what I'm trying to do:

Every early morning (3am), I would like for an automatic transcoding of the recordings of the day copying that recording to a new hard drive. I don't want to delete the original, just want the transcoded file to be in a new location. I assume this shouldn't be too difficult???

If you are using the built in Auto Transcode feature, then it may be difficult to also include copying into the process.

You may look into managing your own queue and processing... Then you'd be able to add copying to a batch file you may be using...

I followed all of those links. it transcodes fine, but it doesn't copy any log files to a backup directory. Also, it doesn't do the main thing i want it to do: move the new transcoded file into a new directory. I added this line to reprocess.bat to no avail (under tidying up section):

move "%~dpn1.avi" "%BackupDir%\%~dpn1.avi"

I need to be clear. I'm not sure that the batch files are your complete solution. They should teach you:

How to add a newly record file to a queue

How to iterate through the queue, processing each item in turn.

And that longer reprocess.bat just has tonnes of stuff to teach you how to flow your batch.

You could make it much easier than that of course.

That last line you added won't work unless you've identified what BackupDir is...

try out my re-uploaded script...I've done exactly what you're asking in the past. I've been running this script for over 2 years now.
