I don't know how exactly how Windows defines the "Inactivity" and what would reset the count but using a recent version of Windows with so many housekeeping processes I would have thought that it may be difficult to run 60 minutes without some activity starting. My server is set to hibernate after 5 minutes and remember having problems when using a longer hibernate time.

When recording or moving round the menus NPVR tells windows to stay awake. The going to sleep bit is handled by normal Windows powersave options if required.
It works fine for me on my two servers except for the older one which stops going to sleep for some reason about monthly. A reboot gets it back to normal.

As Sub pointed out earlier in this thread, NPVR already prevents the PC from going to "sleep" and it does this very reliably. Also, be careful to distinguish between "sleep" and "hibernate" and, in Win 7 and later, "hybrid sleep" - they each work a little differently. In that vein, I am not sure if NPVR prevents the PC from "hibernating" (if, in fact, that is what you actually have set up in the active power scheme - there are separate settings for each sleep and hibernate).

Not entirely NRecord only prevents system sleeps. I think NTray plays a role with manual sleep, shutdown and restars but I think you can still break a recording or live tv. I don't run NTray since my backend it headless.

I have changed things since my earlier post. I no longer run a ParallelProcessing batch file to prevent the system going to sleep while recording.
I finally worked out that my system was going back to sleep (after being woken to record) before npvr started recording. This was fixed by the change to the Unattended Sleep Timeout in the Power Plan options to 5 minutes instead of 2 minutes. (If you don't have this option you will have to do a google search to find out how to add it.)

Since then my system has been working well running Win 10.
