I use tightVNC, and I haven't noticed any resolution problems. In fact, my server has to desktops with different resolutions, and it handles that quite well, too
My GBPVR runs as 720x576 because I cannot get my nVidia 6150 card to scale down higher resolutions on component output. If any has this working, I really would like to know the configuration/driver versions/etc.
Anyway, the 720x576 is perfectly ok for watching recordings on the TV, but not much use for anything else (which is what 'other work' is in my case ). So I use tightVNC for remotely operating GBPVR (although typically I use just the remote) and remote desktop for anything else. I just wanted to point out that both have their merits, under different circumstances. VNC is nice if you want to remotely manipulate the 'same' screen, wherease remote desktop is nice if you just want to operate your media center as a regular computer.
