From say, the TV guide, double click on the show you want to record, scroll down to "record" and this give you the season recording choices and just below that is "quality".
Note this will only have an effect with analogue tuners.
OK, after experimenting setting the capture source to analog tuner I see where you can set it.
First of all, I should have said that I'm using an ATI 650 PCI card, my bad!
So, since I'm recording HDTV it just saves the digital data it receives?
In the software that came with the card there's ~6 different quality settings to choose from, but I keep having the video lock-up for several seconds intermittently using that software...:mad:

Correct. The broadcaster chooses the quality for digital channels.

I wouldnt know why that app is locking up, I'm guessing its not applying those quality settings to digital recordings either. I'm not aware of any apps that are decoding and re-encoding digital channels on fly to change the quality at record time. This would consume a large amount of CPU, and likely lead to A/V sync issues etc, as well as a big drop in quality.
The software I'm using is ATI Catalyst Media Center, I have the intermittent lock-up even when I'm not recording, when it locks-up I see this app jump up to ~50% cpu usage in the task manager, it averages ~2% normally.
So far it appears to be channel dependent, the 1 channel I would most like to record acts up, I thought maybe it was because of weak signal but I tried disconnecting the cable/taking the antenna amplifier out of circuit and the app stays around ~2% cpu usage, I have tried several other channels with no problems.
The same channel never locks-up using GB-PVR!
