I have a suspicion what it's related to. I'm wondering if you were to delete your npvr.db3 file and restart NextPVR and setup your channels again, whether the issue would go away.
OK, I closed NextPVR, stopped the Recording Service, and deleted the npvr.db3 file. I then restarted the Recording Service, reopened NextPVR, and re-setup my IPTV provider and EPG source. I also reloaded the EPG, and re-created my personal channel Group. Of course, NextPVR now doesn't know about any of the recordings I already had on my hard drive - is there any way to make them visible / add them back? Will all my previously set timers now have been deleted also? I'm currently running NPVR with the new build and a new npvr.db3 file. I'll let you know whether this is more stable.
If you've still got them, you can use the 'Import Recordings' button and point it at C:\Users\Public\NPVR\recording-backup.xml. You can also use it with recurring-backup.xml.
I tried that, with both recording-backup.xml and recurring-backup.xml. In both cases a pop-up window said "no recordings imported". All the original recordings are still in the exact same folders with the same names as they were created - I haven't touched them. On the Recordings screen, I still have a blank window with What's New at the bottom. No recordings shown at all. It's not a big deal, but I'd like to get them back if there's supposed to be a way to do that.
Interestingly, now that I have re-imported my previous recordings, I notice that the times of the recordings are now 8 hours time shifted from my location. For instance, a recording that I know was made from 7-7:30pm (Pacific) is now showing as having been made from 11-11:30am (UK time).

Could be a bug related to timezones when importing recordings directly from the .ts metadata. I'll check. Either way, as long as your recordings are pulled in, and you can watch them, this is fairly minor.

This likely means you waited too long and these files have been overwritten. You've already found the backup option of importing the .ts files directly.
Yes, I'm happy that I was able to pull in the recordings using the .ts option, and the incorrect times shown is a minor issue.
For about 18 hours now, NPVR has been operating with the new build and new npvr.db3 file. So far, so good. The Recording Service has stayed running, and two concurrent recordings have completed without problem. I'm holding my breath!
