Some recordings are truncated at odd times. In my specific example, NFL games are being ended at 38 minutes or so, even though the recording is set for 3 hours. I've attached the relevant log files for a football game which began recording on Sept 28th, at 7:24pm. The recording ended 38 minutes afterwards. I am also attaching the screengrab which shows that it THINKS the recording is 3 hours.
In the Record Log file I find it stopping the recording.
"2017-09-28 22:17:05.980 [DEBUG][9] Stopping recording (1122 on 21). Past end time of recording. 22"

As far as the logs are concerned, it looks like it started recording at 7:24, and stopped the recording at 10:17. There is no sign of any errors, or early stopping of the recording. I'd guess the HD Home Run stopped delivering data for some reason. ie, network issue, firewall issue, device restarted etc. You might need to try catch it when it's having this problem, with NextPVR still trying to do the recording, but file no longer growing, then fire up the HDHomeRun settings app, and check if it's still locked to a signal, and still actively sending data etc.

I am having similar issues. I also use the HD Homerun and it seems that episodes run about 8 minutes. NextPVR thinks it is still recording but nothing is happening with the file. It has currently stopped and I started the HD Homerun app and it is still receiving a signal. I am running on an HP 8200 with Windows 10. I have attached log files. I am a new user so please tell me if anything else would be helpful.
