Anything you do from the Config app. will be logged either to config.exe.log or config.exe-native.log. Note that new logs are created by the various gbpvr processes at various stages and the previous ones are renamed blah.exe-1.log, blah.exe-2.log etc. The most recent won't have a -X number and the oldest will be -3, e.g.,

config.exe.log (most recent)
config.exe-3.log (oldest)

Its found my card and got a load of channels but not all. Also some of them have (Audio 2) on them with no sound.

Ignore the Audio 2 channels they're for 'visually impaired commentary' and only have sound when a narrator is explaining things for blind or visually impaired viewers. As for missing channels - which ones in particular.

also, is there a channel list i can use to change channels insted of cycling through? (going to the Wiki now)

Do you mean in 'Live TV'? You can enter a channel number from your remote or from the keyboard (I believe). I don't think there's a popup that will list channels to select from. Sounds like a good idea though - one for the Wishlist perhaps.
