you're close. it sounds like all you have left to do is map the physical channels (the result of the channel scan which appears on the right side of the mapping window, under the little screen) to the EPG channels (appearing on the far left). I'm assuming you clicked 'Update EPG' at some point and got a list of channels loaded?

In particular, you want to look at the third graphic and the instructions pertaining to it. I will tell it my way below:
There is a listing occupying the left 2/3 of the mapping window. The left half of the list are the channels from your program guide. Next is a checkbox to enable or disable a given channel in the program guide. On the right there is a list that starts blank, titled Tuning Request. If you click a box in that column, you will get a drop-down list of all the available physical channels found in the channel scan (which are those listed on the far right under the preview window). So you just go down the list and map the channels; you MUST disable any epg channel that will not be associated with a physical channel.
Once you're done with the mapping and you click OK, your capture source screen will look like the 2nd screen shown on the wiki page... you'll see epg channels and their associated tuning requests (which include the channel or frequency info along with the various stream id's for the desired program). OK again saves the whole kit into the config.
Oh, something really neat for you: if you look on the Misc2 tab in config, where you have the .ts mux selected (so it records the transport stream straight off the card, no re-muxing), there is a check box to enable Multi-record. That will allow you to simultaneously record multiple tv programs that are broadcast on the same transponder (the number after the T: in each tuning request)... I've been led to understand that many of the UK DVB-T channels are neatly organized across just a few transponders.
