How do I use GB-PVR as the GUI for the MVP? I would like to send to the MVP without a TV for purposes of music.

You have to boot up (power up) the MediaMVP while the 2 Hauppauge services are running, then one the MVP is connected, shut down those processes. You can put the Media MVP in standby, and make sure the GBPVR server is started (as above through config - number of servers to autostart=1). The next time you bring the MediaMVP out of standby, it will have the GBPVR interface. Remember, the 2 Hauppauge services have to be off for this to work.

I have it working from the TV with the GB-PVR skins. I shut down the Hauppage services and GB-PVR looks and plays just fine. The problem is that I want to control the playing of content from the PC. How do I do that? Everything I play on the PC comes out on the PC.

Its not supported, so dont ask me anything about it, or try to report bugs with it, but you can run the following:

gbpvr.exe -mvpmode -visible

Updates to the menus etc wont be reflected on the MVP, but you will be able to use this method to start the playback of music files etc.

Thanks this is a great mode! It works very well. Perhaps I will have some comments later to share but I won't report any bugs.
