Next month I will be acquiring a widesceen (CRT) TV and I'm wondering how this effects my GB-PVR setup. I see the screen size setting in the config app, what does that do exactly?

Also, is there anything I can do grahpics card wise to make the most of the new TV? I have a NVIDIA GeForce FX5700

The rather dull answer is that you don;t really need to do anything.

When I moved from 4:3 to 16:9, I just left the res at 720x576 and set ratio to 16:9 in config. IIRC this tells gbpvr how to auto-size playback.

The setting in the config app is used to help GB-PVR automatically determine how to handle the video aspect ratio. Rules like 16:9 video on 16:9 tv is shown fullscreen, 4:3 video on 16:9 tv is shown pillar box, etc.

The new UI does also use it in logic to display pictures in the correct aspect ratio in the picture library. These are the only things it is used for though.

it doesn't just use the screen resolution? or did you include it in the logic to cover the case of widescreen TVs with the same resolution of normal TVs. well, actually it goes both ways, since Pixels on TVs over here (NTSC) are squeezed horizontally.
darn rectangular pixels :p

No, this is what it used to do in the old GUI, and it often ended up with the wrong aspect ratio for the picture due to a large number of people running unexpected 4:3 resolutions, or other odd-ball resolutions, on their 16:9 TVs.
