Yes, you can do that. The MVP really has no effect as to what you can do on the server, with the exception of live tv. You would need X numbers of tuners, depending on how many different "clients" you would want to be able to watch different channels of live tv.

Yes you can. The server can 'serve' multiple clients. For all practical purposes, GBPVR on the server is like just another client.
