PCH + GBPVR Disconnected

I have the PCH A110 on the way. I plan on using it mainly as a GBPVR client in my home but I would also like to bring it with me at times and play media off an internal HDD on other TVs or the entertainment system in our van.

Is it going to be easy for me to disconnect and run it while not connected to the GBPVR server?

You wont get the GB-PVR UI when you dont have your PC. You can still use the original Popcorn Hour UI when away from your PC though.
